Fish Masak Asam

Another simple Malay dish... this can be very appetising with balanced taste of sweet & sour.

INGREDIENTS:
1 whole fish or (part of it if it is too big)
½ tsp Turmeric Powder
½ Big Onion*
2 Green Chillies* (no stock so I used red ones)
Few Chilli Padi*
2 Inches Ginger - sliced finely like matchsticks
3 cloves Garlic* (* sliced)
1 cup Tamarind juice
1 tbs Oyster Sauce
1 tbsp Chilli sauce
1 Tomato - diced
2 tsp Sugar
Salt

METHOD:
1. Rub fish with salt & turmeric powder.
Deep fry until crispy or your preferred doneness.
Dish up.

2. Heat up few tbsp oil & fry all the sliced ingredients until fragrant.
Add in tamarind juice, chilli sauce & oyster sauce.
Add in sugar & salt to taste.
Stir until boiled & add in tomato & cook for another a minute.
Pour onto the fried fish in the dish.

3. Serve immediately with white rice.
