Chili Fish Kampung Style


The name of this dish is copied from one of the restaurants in Miri that we used to patronage frequently. It is just a simple chili fish with ginger but once in a while I just wanted to have a night off from the kitchen and give myself a treat instead. Anyway, this time I cooked the dish myself and no problem to obtain the same taste like the one we used to have from the restaurant.

INGREDIENTS:
1 medium size Fish (I used Red Snapper) 
1/2 tsp turmeric Powder
5 Shallots*
3 cloves Garlic* (* blended)
1" Ginger - sliced into matchsticks shape
1 Big Onions - sliced lengthwise
6 tbsp Chili Paste
1 Tomato - cut 6
1 tsp Tamarind paste - mix with water to produce juice 
Salt & Sugar

METHOD:
1. Rub fish with turmeric powder & salt.
Deep fry until crispy on the outer part.
Put aside on a plate.

2. Heat up few tbsp of oil & fry blended ingredients until fragrant.
Add in big onion & ginger & stir for a minute.
Add in chili paste & stir until fragrant & oil surface out.
Add in tamarind juice, tomato, salt & sugar.
Stir until boiled & pour onto the fish.

3. Serve hot and with rice.
