Mamak Fried Mee ( Mee Goreng Mamak )

This is our breakfast menu today on the popular request from the family. It is not a perfect Mee Mamak as I simply put whatever I have in the fridge but taste wise is perfect... my kids like it moist! 1 kg of noodles was all cleared by only 5 people!

Serve 5-8 people
INGREDIENTS:
1 kg Yellow Noodles
6 Shallots*
4 cloves Garlic* (* pounded) 
2 Red Chilies - sliced
1 big Onion - sliced lengthwise
1 tbsp Curry Powder
4 tbsp Chili Paste
1 Chicken breast - sliced
Assorted Fish/Crab/Squid Balls - sliced
3-4 Eggs
2 Tomatoes - diced
1 bunch Mustard Leaves - cut
1 bowl Bean Sprouts
4 tbsp Soy Sauce
2 tbsp Tomato Sauce
Salt
Garnishes - spring onion/ chinese celery/ fried onions
Companion - chili oil / chili soy sauce

METHOD:
1. Heat up few tbsp oil & fry pounded ingredients until fragrant.
2. Add in sliced chilies, onions & curry powder. Stir for a minute.
3. Add in chili paste & fry until fragrant.
4. Add in chicken & assorted seafood balls & stir until cooked.
5. Add in eggs & stir well until egg is almost done.
6. Add in 1/2 cup water & salt.
7. Add in diced tomatoes & mustard leaves and stir well.
8. Add in noodles, soy sauce & tomato sauce.
Stir until well mixed.
9. Dish up & garnish.
