Laksa Taiping (again)

 I shared this many times already but just showing it off again.... This time I made it a lot simpler with less garnishes since not many heads in the house. Drop a tbspn of Petis to add little twist.... and walaaaa.....!

BAHASA MALAYSIA VERSION
 Dah lama tak masak Laksa Asam ala Taiping ni..... Puas hati buat sendiri, boleh adjust pedas, masam ikut selera sendiri.... Hubby Along makan berpinggan-pinggan berulang kali dari siang sampai malam.... sonok tengok dia makan. Biarlah dia nak makan banyak pun takpa, menu ni rendah kalori nya..... hehe... bukan selalu pun kan.

Along ngantuk sangat ni.... tak larat nak menaip banyak.... nak resipi rujuk kat sini & sini.... gunait!


Kek Lapis Pandan Prune & Coklat (Pandan Prune & Chocolate Layered Cake)

 Beautiful green Pandan layered cake which I modified with added prunes and chocolates... awesome!

Yields: 8" x 8"
INGREDIENTS:
10 Eggs - gred A
450g Butter
200g Flour
100g Horlicks
160g Caster Sugar

1 small bottle Pandan Paste
1 tbsp Ovallette
340g Condensed Milk

1 small tin Serikaya
100g Coconut Milk powder
1 tsp Vanilla Essence

1 pack Seedless Prune  - chopped
1 pack Chocolate Chip

METHOD:
1. Beat eggs, sugar &  ovalette until doubled in volume using high speed.
2. In a separate bowl, beat butter & condensed milk until fluffy.
Add in coconut milk powder & mix well.
3. Mix both mixture well.
Add in serikaya, pandan paste, horlicks and mix well.
Add in flour & EV, mix well.
4. Line & grease tin.
Spread 6 tbsp of batter into the tin & grill until golden color on the surface.
Repeat the layering process and lay prunes and chocolate in between.
Finally bake 10 minutes usung top & bottom heat.
5. Cool cake before slicing.

Puas hati buat kek ni sebab menepati citarasa sendiri... Along inginkan kek lapis yang harum pandan, lembab dan lemak... Resipi asal DayangJack ni memang baik punya.... Kek asal Kek Evergreen, Along tambah prune & coklat
Resipi di taip semula utk mudah rujuk sendiri
Hasil: 8" x 8"
BAHAN2:
10 biji Telur gred A
450g Mentega
200g Tepung Gandum
100g Horlicks
160g Gula Halus

1 botol kecil Pandan Paste
1 sb Ovallette
340g Susu Pekat

1 tin kecil Serikaya
100g Serbuk Santan
1 sk Esen Vanilla

1 bungkus Prune tanpa biji - potong kecil 
1 bungkus Coklat Cip

CARA2:
1. Pukul telur, gula dan ovalette sehingga kembang (high speed).
2. Dalam bekas yang berasingan, pukul mentega bersama susu pekat sehingga putih.
Masukkan serbuk santan dan putar lagi hingga sebati.
3. Satukan adunan telur dan mentega sehingga sebati.
Masukkan serikaya, pes pandan, horlicks dan gaul sebati.
Masukkan tepung dan esen vanilla, kacau sehingga sebati.
4. Sediakan loyang yang dilapik & disapu dengan mentega.

Ratakan 6 sudu makan adunan ke dalam tin.
Bakar sehingga bertukar warna keperangan dgn menggunakan api atas.

Ulangi proses melapis dan tabor prune & coklat cip selang seli sehingga habis.
Akhir sekali bakar dgn api & bawah selama 10 minit.
5. Sejukkan kek terlebih dahulu sebelum dipotong.

Lepat Pisang (Steamed Banana Rolls)

 A healthy Malay traditional kuih, delicious for breakfast or with tea anytime! Coincidentally, I had some leftover banana leaves after making Tapai.... and also some ripe bananas sitting in the basket smiling at me... so immediately this kuih crossed my mind. It is so easy to make that I can afford making it while doing multiple other tasks... watching The Voice on Astro tv.... cooking Chili Oil (which took few hours).... chatting with a couple of friends.... and making this kuih!


 There is no need for an accurate recipes but I written down some measurement as a guide:

INGREDIENTS:
5-6 medium size Bananas - mashed
5-6 tbsp Flour
2 tbsp Sugar (optional) 
1/2 cup Grated Fresh Coconut*
1 tbsp Sugar*
A pinch Salt* (* mix)
Banana Leaves - cut to square & soften on open fire 

METHOD:
1. Mix well mashed bananas, flour & sugar.
2. Spread a tbsp of mixture on a piece of banana leaf.
Spread on coconut mixture on top of it as shown in photo below.
3. Fold the banana leaf and roll into a cylinder shape and fold both ends at the bottom as shown below.
4. Steam for 30 minutes.

Dah lama tak makan kuih lepat ni.... kuih lama2 camni sedap dan tak risau pasal kolestrol. Kebetulan ada lebihan daun pisang malam tu... ada pulak pisang yg dok terpongeh takda org nak makan... elok gak di buat lepat dapat bawa bekal utk sarapan ke pejabat esuk hari nya.

Resepi orang dulu2 camni tak payah nak resepi sukat teruk2... agak2 jer pun jadi sedap.... kat bawah ni Along kasi sukatan buat panduan.

BAHAN2:
5-6 Pisang - di lecek
5-6 sb Tepung Gandum
2 sb Gula (boleh skip jika pisang manis) 
1/2 cwn kelapa Parut*
1 sb Gula*
Secubit Garam* (* gaul)
Daun Pisang - potong 4 persegi & di layur sebentar atas api 

CARA2:
1. Campur sebati pisang lecek, tepung & gula.
2. Ratakan sesudu ke atas sekeping daun pisang .
Ratakan pula di atas nya sesudu campuran kelapa parut* spt foto di atas.
3. Lipat dua daun pisang, gulung & lipat kedua2 hujung ke bawah spt foto di atas.
4. Kukus selama 30 minit sehingga masak.

Cream Cheese Rolls

These cookies look like Pineapple Rolls but is not..... it has no filling and made of cream cheese... cheesy and melt in the mouth.... The recipe is taught by the famous Chef Rashid from Kuching so very popular in Sarawak. Sharing here to show the special cookies in Sarawak but I hope you understand why I'm unable to share the recipe.... I have no licence to do so.... you got to attend his class and if I freely share here then no one will attend his class anymore.... right?

The cookies are very tiny.... Love to see them dancing on the red carpet.....


BAHASA MALAYSIA VERSION
Along nak tunjuk satu lagi biskut yang popular di Sarawak ni.... Kalau kat Sarawak, ianya selalu di jual di musim perayaan. Nampak macam Tart Nenas tapi tak sama langsung sebab rasa nya lemak2 cheese, gebu cair di mulut dan takda inti. Sedap sangat dan mengasyikkan.... Maaf ya, Along tunjuk jer tapi tak dapat nak kongsikan resepi nya sebab biskut ni di ajar oleh Chef Rashid yang terkenal dari Kuching. Beliau banyak menganjurkan kelas2 baking. Kalau Along kongsikan di sini nanti tentulah mengganggu sambutan kelas beliau. Along pun takda kebenaran untuk kongsikan dgn public.... harap anda pun faham kan.

Women's Lunch Gathering

 Today we had small gathering for lunch with sisMarina who came from KL.... I didn't prepare a long menu but alhamdulillah we were loaded with food from pot lucks... It was so nice to catch up and we chit-chatting until the evening. I tried all the kuih an love them all.... gotta skipped my dinner because I was so full.... alhamdulillah & TQ all the lovely ladies!

1. Mee Bakso Tulang
- the main dish for lunch.... beef bones were slowly cooked overnight to ensure naturally delicious soup.

2. Mix fruits (Guavas, Starfruits, Green/Red Apples) served with Homemade Petis & Ground Peanuts

Potato Fritters (Cucur Kentang)

 This has become viral for quite some time amongst the facebookers and bloggers... I only have the opportunity to try out recently. Nice and crispy while they are still hot, dipped in chili sauce.

I did mine with mixture of colorful vegetables for more attractive look....

Hidangan: 3 orang
BAHAN2:
3 Potatoes*
1 Carrot* (* shredded)
4 tbsp Cornflour
5 tbsp Flour
1 Egg - beaten slightly 
Some Chives
1 Red Chili - sliced1 Big Onion - sliced 
Salt, Black Pepper

METHOD:
1. Mix all ingredients.
2. Heat up oil for deep fry.
Spoon mixture into the hot oil & flip accosionally until crispy.
3. Serve hot with chili sauce.

Fritters ni meletup-letup di sana sini ramai yang dah mencuba di facebook dan blog2 musim ni.... Along jer yang asyik tertangguh-tangguh sebab sekarang ni tak boleh nak rajin sangat sebab tukang makan cuma Along & hubby jer kat rumah ni.... so kena tunggu waktu yang sesuai supaya tak membazir. Bahan2 nya tak susah, kebiasaan nya kentang dan karot memang senantiasa ada. Along pomen sikit ikut selera dan tambah kucai supaya aneka warna sayuran - putih, oren, hijau, merah.... baru nampak ceria dan selera....hehe. Makan panas2 memang sedap semasa masih rangup.... bila sejuk pun sedap tapi kurang ler rangup nya.

Merata2 orang dah cuba tapi tak berapa pasti tuan asal resepi sebab tak di nyatakan dgn terang.... Along pun Google dan tengok2 rupa2 nya resepi ni di kongsikan oleh Ummi @HomeSweetHome pada tahun 2010 cuma sudah di ubahsuai sedikit sebanyak..... patut lah sedap... kalau Ummi punya resepi memang pasti sedap! Along tak pasti, siapa yg mula2 promote semula resepi ni.... terima-kasih juga pada nya sebab kalau dia tak promote mungkin tak lah meletup2 semula resepi ni.... cuma sayang nya takda credit pun buat Ummi.

2. Panaskan minyak yang agak banyak seperti menggoreng cucur.
Sudukan adunan ke dlm minyak & balik2an sehingga garing.
3. Toskan minyak & hidangkan panas2 dgn sos cili.

Sticky Orange Cake

 This is a dump cake.... throw all ingredients to a bowl & zapppp into batter all at once! Such a lovely light cake.... I cannot believe the outcome with such dumping method! Even after pouring the orange juice on the hot cake, it remains light & fluffy, moistened with nice orange aroma. One thing is a bit sweet despite I already reduce the amount of sugar in the syrup and can still reduce the sugar a bit more if the orange is already sweet.... I brought the cake to the office as the oranges were from our office fruit basket.... it was all gone so quickly...

I made double portion with slight amendment and retyped the recipe to produce 1 bundt
INGREDIENTS:
350g Self-raising Flour
350g Caster Sugar
350g Butter
10 tbsp Milk
4 medium Eggs
2 large Oranges - grate rind & squeeze juice
100g Sugar - for topping

METHOD:
1. Place flour, sugar, butter, milk, eggs and orange rind into a large mixing bowl.
Whisk with an electric mixer until all ingredients are incorporated.
2. Pour into pan and bake for 45 minutes until cooked.
3. 10 mins before end of baking time, heat together topping sugar and orange juice in a small saucepan.
4. Remove cake from oven and make some holes on top with a skewer.
Pour orange juice mixture onto the cake.

Leave cake in the pan until cold before invert (I left mine overnight).

 Senang sangat nak buat kek ni... orang yg tak pernah buat kek pun boleh buat.... campak jer semua bahan2 ke dalam mangkuk sekali gus baru di pukul semua nya sekali sehingga kembang. Hasil nya amat mengagumkan.... kek yang gebu dan ringan... aroma oren yang kuat harum.... cuma sedikit manis walaupun Along dah kurangkan gula nya.... bolehlah di kurangkan lagi jika suka. Bawa kek ke opis.... abis licin sekelip mata!

BAHAN2:
350g Tepung Naik Sendiri
350g Gula Kastor
350g Butter
10 sb Susu Cair
4 bj Telur
2 bj besar Oren - parut kulit nya & perah jus
100g Gula - utk topping

CARA2:
1. Letak tepung, gula, butter, susu, telur & parutan oren ke dlm mangkuk.
Pukul dgn whisker sehingga sebati.
2. Tuang ke dlm acuan & bakar 45minit sehingga masak.
3. 10 minit sebelum cake masak, panaskan gula & jus oren sehingga sebati.
4. Keluarkan kek dari oven & cucuk2 kek dgn lidi.
Tuangkan rata jus oren ke atas kek.
Biarkan kek di dalam tin sehingga sejuk sebelum di keluarkan (Along biarkan semalaman).



Roti Puri

 Liana requested for chicken curry.... and therefore I made this Indian bread to go along the curry served for breakfast. Everyone enjoyed the tasty Chicken Curry for the Puri breads dipping.... It is very easy to make this Roti Puri which dough does not need any levening ingredients and yet it puffs up so beautifully. Enjoy it right away soon after fried for crispy and soft texture... It gets little bit tougher when cold but still ok when dipped into sufficient gravy.

Makes 12
INGREDIENTS:
2 cups Flour
1 tsp Salt
150ml Water
1 tsp Ghee / Veg oil

METHOD:
1. Mix flour & salt.
Pour in water gradually while mixing & knead until non-sticky to touch.
Knead in ghee/oil until soft.
2. Cover with cloth and let it rest 20 minutes.
3. Divide into 12 small balls.
Flatten each into a circle.
4. Heat up oil for deep fry.
Deep fry each dough until puff up, flipping few times and until golden spots on surface.
5. Serve with your favourite curry.

Senang dan cepat jer nak sediakan Roti puri ni.... Tak payah nak perap lama2 sebab tak letak apa2 bahan penaik pun. Hasilnya tetap menggelembung bila di goreng.... makan panas2 rangup di luar... cicah pula dengan kari ayam (Liana minta mama masakkan kari).... mmmm sedap nya sarapan... semua seisi keluarga syok makan! TQ Azlita & tuan asal yang kongsikan resepi nya.

Along guna minyak sapi.... roti nya lebih harum & lemak.... Along suka bau roti nya.

Along taip semula untuk mudah rujuk sendiri
Hasil: 12 biji
BAHAN2:
2 cwn Tepung Gandum
1 st Garam
150ml Air
1 st Minyak Sapi / Minyak Jagung

CARA2:
1.  Campurkan tepung & garam.
Masukkan air sedikit2 sambil di gaul & uli sehingga tidak melekat.
Letakkan minyak & uli sehingga lembut.
2. Tutup dgn kain & perap 20 minit.
3. Bahagi doh kpd 12 bahagian & bulatkan.
Canai setiap satu sehingga leper.
4. Goreng dalam minyak yang banyak & telah dipanaskan dahulu.
Balik2an sehingga menggelembung.
Angkat apabila warna keperangan.
5. Hidangkan dgn kuah kari.

Apple Brownies


 
 This recipe has been in my keeping for more than a decade and tested many times.... one of our favourite brownies. Credit to a friend Chan Lau Choo and you gotta ask her for the recipe.... I made it a couple of weeks ago for UsuRaz to bring back to his college, had some spares for Liana and sent some to my sisters in KL.

BAHASA MALAYSIA VERSION
Buat bekal anakanda UsuRaz balik ke kolej dan hantar sedikit ke KL utk adik2. Resepi ni dah lama dalam simpanan, lebih 10 tahun dah dan memang kesukaan banyak kali dah buat. TQ officemate and fren - Chan Lau Choo yg berkongsi resepi.... kalau nak resepi pi minta dengan dia ya.

Kerabu Ayam & Mangga (Chicken & Mango Salad)

 I had shredded chicken leftover from Laksa Sarawak & turn it into salad... very good appetiser!

INGREDIENTS:
1/2 piece Chicken Breast - cooked & flossed 
1 Young Mango - grate
1 Galangal Flower - finely sliced 
1-2 Red Chili*
Chili Padi*
1" Young Ginger*

1 Lemongrass*
2 Shallots*
1 tbsp Dried Shrimps*
(* pounded) 

1-2 tbsp Kerisik (Roasted Coconut paste)
Lime juice
Salt & Sugar


METHOD:
Mix all ingredients & serve with rice along main dishes.

Selepas buat Laksa Sarawak, ada lebihan taburan ayam... Along buat kerabu jer.... sedap gak bila di campur dgn mangga muda.... buat pembuka selera makan nasi....

1/2 ketul Dada Ayam - masak & carik 
1 bj Mangga Muda - sagat
1 kuntum Bunga Kantan - hiris halus
1-2 bj Cili Merah*
Cili Padi*
1" Halia Muda*
1 btg Serai*
2 ulas Bwg Merah*
1 sb Udang Kering* (* tumbuk) 
1-2 sb Kerisik
Jus Limau Nipis - secukup rasa 
Garam, Gula

CARA2:
1. Gaulkan kesemua bahan sehingga rata & secukup rasa.
2. Hidangkan dgn nasi & lauk utama.


Chocolate & Butterscotch Bread Pudding (Again)

 Care for bread pudding? Check it out HERE. I made this last month to serve farewell party HERE. This time made it with added raisins and nuts served with custard sauce.

Just taken out from oven...
The bread fluff once baked but shrink back once cool and that is normal.
